Slow Cooker Chili

Ok, so I’m not awesome at remembering to take pictures of the finished product. Mama K is the pro at this! Anyway! Here is a recipe, that has gone over fantastic in my house. Even my kids love it! It’s totally yummy!

Ingredients

  • 1 tablespoon olive oil
  • 2lbs ground beef
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 1 poblano chili pepper, minced
  • 2 & 1/2 cups beef stock
  • 1 can (16oz) of black beans, rinsed & drained
  • 1 can (16oz) of red kidney beans, rinsed & drained
  • 1 can (15oz) crushed tomatoes
  • 1 can (15oz) diced tomatoes
  • 3 tablespoons chilli powder
  • 2 tablespoons smoked paprika
  • 2 teaspoons oregano
  • 1 & 1/2 teaspoons ground cumin
  • 1 teaspoon hot sauce (optional)
  • Kosher salt & pepper, to taste
  • 1/2 cup sour cream
  • 2 green onions
  • 1 cup corn chips
  • 1 cup shredded TexMex shredded cheese

Directions

  • Heat olive oil in a large skillet, over med-high heat.
  • Add ground beef to skillet. Cook until browned. Make sure to crumble. Drain excess fat.
  • Add the minced garlic, diced onion, minced pepper. Cook until tender (this takes about 5 minutes).
  • Put ground beef mixture into slow cooker (you’ll want it to be at least a 6qt one).
  • Stir in the beef stock, kidney beans, black beans crushed tomatoes, diced tomatoes, seasonings, and hot sauce in the slow cooker.
  • Cover and cook on low, for 8 hours.
  • Serve, garnished with sour cream, cheese, diced green onions, and corn chips.
  • ENJOY!
All ingredients added, and stirred together!
All ready to cook for 8 hours! Forgot to take pictures after this. But trust me, we ate it all!
